Around 1960, farmers started the cultivation of the blackcurrant bud for perfumery. The first fragrance to use its absolute was Amazone, by Hermes, in At the time, buds were an accessory income to blackcurrant fruit sales. The fields were designed to harvest the fruits. The buds were harvested in the harsh middle of winter, after the first frosts, when pruning the branches. Pruning involved cutting the lowest branches, whose fruits were too close to the earth to be good, and cutting out some higher branches to increase the number of fruits on remaining branches. Those cut branches were then manually disbudded, at night, by farmers working together in their kitchens, after the harvest. 5 hours of manual work were necessary to collect 1 kg of blackcurrant buds. Families & friends would sit around the table, and share village stories while working on the day s cut branches. Today, manual harvesting & disbudding has been replaced by machines, which now allow farmers to harvest & mechanically disbud 100 kg of buds in the same 5 hours. IFF/LMR s long term sustainable collaboration with the cooperative has enabled them to think & invest in the future: organic farming, cultivation modes, harvesting techniques, all favored by our commitment to the farmers for the 10 year duration of a plantation. The harvesting machine, developed by the farmers with the support of IFF/LMR Naturals team, was inspired by a grain harvester. The machine cuts the branches, which then go through a filter to pull off the buds and rid them of waste. Farmers then sort the buds, to eliminate all remaining impurities: leaves, twigs etc. The sorting is completed in machines often completely custom-made by the farmers themselves. Once sorted, the buds are then brought to the cooperative, to be bagged. The TOTAL worldwide yearly production amounts to 25 to 30 tons. Once at IFF/SADEV, the IFF operators unload the bags from the truck, & load the buds onto trays, evenly distributing the buds in each of the seven trays. As the loading proceeds, the trays are stacked on top of each other, until all seven trays are filled with the fragrant buds. The trays are then loaded into the extractor for solvent extraction & transformation into the concrete. The extractor contains several perforated trays which allow the solvent to circulate freely between the buds, and prevent them from being crushed. The buds are placed between the plates. The solvent is poured into the extractor, which is tightly sealed, and then behaves like a washing machine, with the solvent washing the buds. The solvent evaporates from the concentrator & what s left is the concrete. After the wash, the solvent is EMPTIED from the extractor and is placed into a steam heated CONCENTRATOR. Later on, the concrete will be shipped to IFF-LMR in Grasse for transformation into the absolute. The concrete is mixed with alcohol, then cooled down to 0 & filtered to eliminate the waxes. Finally, the absolute is obtained after boiling the mixture in a vessel under vacuum to eliminate the alcohol. IFF-LMR will further refine the absolute with molecular distillation, giving perfumers its famous Blackcurrant Bud Absolute MD, a clearer and more acidulous interpretation of a product which remains completely pure. z Le cassis dans les hautes cotes de bourgogne Il existe en plein cœur de Bourgogne, à l écart des grandes voies de communication, un pays de forêts, de collines et de combes austères que les busards envoûtent de leur vol prédateur. Il enferme dans ses baies noires le rubis d une boisson bienfaisante pour toutes sortes de maux, il recèle au cœur de ses bourgeons le secret d un arôme puissant. l hiver, alors qu un vent glacial souffle sur la nature frigorifiée, le rêve de la récolte des fruits noirs soutient l effort des paysans qui coupent les branches couleur de la fourrure du renard et porteuses de bourgeons ; le soir dans les villages juchés sur les plateaux, accrochés aux collines ou accroupis dans le fond des vallons, les maisons se referment sur l odeur pénétrante du bourgeon de cassis. Les mains, les habits, les cheveux s imprègnent de cet arôme qui développe avec lui les projets des plus simples aux plus fous suivant l âge, la situation, l ambition de ceux qui les égrènent à la pointe du couteau, au fil des jours, au long des soirs, au rythme des hivers. Dans la mémoire des enfants, la saveur, la couleur, l odeur du cassis s incrustent, les marquant pour la vie du sceau de leur appartenance à ce pays farouche. C est à cette époque là que se réveillent dans le profond des nuits, les âmes en errance des moines cisterciens bâtisseurs, défricheurs, qui voulaient dominer l esprit de la forêt, chasser le souvenir des druides et des rites païens, domestiquer la vigne et aussi le cassis. Elles veillent ces âmes monastiques à ce que jamais ne disparaisse de la mémoire des bourguignons la croyance aux vertus bienfaisantes du cassis. Et c est ainsi que par instinct on boit dans le fond des chaumières ou sur des tables d apparat, qui une tisane médicinale, qui une liqueur de velours sombre. Et c est ainsi que le cassis dans cette Bourgogne là est plus qu une production. Enraciné dans le cœur des hommes et des femmes, il tient une place insoupçonnée, tout comme l extrait de son bourgeon dans les parfums de marques prestigieuses. Quelle coquette devinera jamais que son parfum préféré s enrichit de cet arôme incomparable qui recèle les chimères d une Bourgogne secrète exhalées par l essence du bourgeon de cassis!
